A delightful and nourishing one-pan dish combining tender chicken and vibrant carrots for a quick and satisfying meal.

Ingredients

  • 1 pound boneless, skinless Chicken Breast, cut into bite-sized pieces
  • 3 medium-sized Carrots, sliced into thin rounds
  • 1 small Onion, diced
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 1 cup Chicken Broth
  • 1 teaspoon Dried Thyme
  • Salt and Pepper to taste
  • Chopped Fresh Parsley, for garnish (optional)

Instructions

  1. Prepare the Ingredients: Clean and cut the chicken, slice the carrots, and dice the onion and garlic.
  2. Sauté the Chicken: Heat olive oil in a large skillet over medium-high heat, add chicken and season with salt and pepper. Cook for 5-7 minutes until browned.
  3. Add the Vegetables: Stir in the diced onion, sliced carrots, and minced garlic. Cook for another 5 minutes.
  4. Pour in the Broth: Add chicken broth and thyme, bring to a simmer, and reduce heat to medium-low.
  5. Cook Through: Cover the skillet and let cook for about 10 minutes or until chicken is fully cooked and carrots are tender.
  6. Garnish and Serve: Remove from heat, sprinkle with fresh parsley, and serve immediately.
