Ingredients
1 ½ cups all-purpose flour
1 cup granulated sugar
½ cup unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup buttermilk (or milk with 1 tablespoon of vinegar)
½ cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup unsalted butter, softened
3 cups powdered sugar
½ cup unsweetened cocoa powder
1 teaspoon vanilla extract
2-4 tablespoons heavy cream
2 cups crushed chocolate cookies (like Oreos)
Gummy worms for decoration
Instructions
Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners.
Mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
Combine buttermilk, vegetable oil, eggs, and vanilla in another bowl.
Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
Fill each cupcake liner about two-thirds full with batter.
Bake for 18-25 minutes, or until a toothpick comes out clean.
Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack.
Prepare the frosting by beating the butter until creamy, then gradually add powdered sugar and cocoa. Mix in vanilla and heavy cream until desired consistency is achieved.
Frost the cooled cupcakes and sprinkle crushed cookies on top.
Decorate with gummy worms for a fun finishing touch.
