An incredibly simple yet flavorful crockpot recipe combining juicy chicken breasts with a rich cream sauce.

Ingredients

  • 4 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp red pepper flakes (optional)
  • ½ cup chopped sun-dried tomatoes (in oil, drained)
  • 2 tbsp butter
  • Fresh basil or parsley, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Whisk together the chicken broth, heavy cream, grated Parmesan, minced garlic, dried oregano, dried thyme, and red pepper flakes in a bowl.
  3. Place the seasoned chicken in the crockpot, and pour the creamy sauce over the top.
  4. Sprinkle the chopped sun-dried tomatoes over the chicken.
  5. Cover the crockpot and cook on LOW for 4 hours or HIGH for 2 hours.
  6. Add the butter to the crockpot 30 minutes before serving and stir.
  7. Garnish with fresh basil or parsley before serving.

Notes

For a thicker sauce, add a cornstarch slurry in the last 30 minutes of cooking.
