A succulent and flavorful roasted chicken made in a Dutch oven, seasoned with herbs, garlic, and lemon for an impressive meal.

Ingredients

  • 1 whole chicken
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 4 cloves garlic, minced
  • 1 lemon, sliced
  • Salt and pepper to taste
  • 2 cups chicken broth
  • Optional: Carrots, potatoes, onions (chopped)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken with salt, pepper, and rosemary, rubbing under the skin.
  3. Heat olive oil in a Dutch oven over medium-high heat and sear the chicken until golden brown.
  4. Scatter garlic and lemon slices around the chicken.
  5. Pour chicken broth into the pot without rinsing the seasonings.
  6. Add optional chopped vegetables around the chicken.
  7. Cover the Dutch oven and roast for about 1.5 hours or until the internal temperature reaches 165°F (75°C).
  8. Remove the chicken and let it rest for 10-15 minutes before carving.
