A delightful dish combining tender chicken, crunchy cashews, and vibrant vegetables in a savory sauce, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, diced
  • 2 cups broccoli florets
  • 1 bell pepper, sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 cup cashews, roasted
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken: In a bowl, combine the diced chicken with soy sauce, oyster sauce, and cornstarch. Let it marinate for 15 minutes.
  2. Sauté aromatics: Heat vegetable oil in a large pan over medium-high heat. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Cook the chicken: Add the marinated chicken to the pan and cook for about 5-7 minutes or until the chicken is no longer pink.
  4. Add vegetables: Introduce the broccoli and bell pepper into the pan, cooking for an additional 3-4 minutes until tender yet crisp.
  5. Finish with cashews: Stir in the roasted cashews and season with salt and pepper to taste.
  6. Serve and enjoy: Serve hot with rice or noodles to create a complete meal.

Notes

Consider swapping in your favorite veggies or adjusting seasonings to suit your taste. For gluten-free, use tamari instead of soy sauce.
