A comforting Chicken Noodle Casserole featuring tender chicken, hearty noodles, and a creamy sauce, perfect for busy weeknights.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 8 ounces egg noodles (or any pasta of your choice)
  • 1 cup frozen mixed vegetables (peas, carrots, and corn work well)
  • 2 cups cream of chicken soup (homemade or canned)
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese (for topping)

Instructions

  1. Cook the noodles: Boil a pot of salted water. Add the egg noodles and cook according to the package instructions until al dente. Drain and set aside.
  2. Prepare the sauce: In a large mixing bowl, combine the cream of chicken soup, chicken broth, garlic powder, onion powder, dried parsley, and black pepper. Stir until well mixed.
  3. Combine ingredients: Add the cooked chicken, frozen mixed vegetables, and drained noodles to the sauce mixture. Gently fold everything together until the noodles and chicken are evenly coated.
  4. Transfer to baking dish: Preheat your oven to 350°F (175°C). Pour the mixture into a greased 9×13 inch baking dish, spreading it out evenly.
  5. Add cheese topping: Sprinkle the shredded cheddar cheese on top of the casserole, covering it completely.
  6. Bake: Place in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the edges start to brown.
