A comforting and flavorful homemade ramen dish that comes together quickly, perfect for busy weeknights.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 packs of ramen noodles
  • 2 green onions, chopped
  • 2 soft-boiled eggs
  • 1 tablespoon soy sauce
  • 1 tablespoon miso paste
  • 1 teaspoon ginger, minced
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare the broth: In a large pot, bring the chicken broth to a boil. Add the minced ginger and garlic.
  2. Cook the chicken: Add the chicken breasts to the pot. Let them cook for about 15 minutes, or until the chicken is cooked through. Remove the chicken and shred it.
  3. Cook the noodles: Add the ramen noodles to the boiling broth. Cook according to package instructions, about 3-4 minutes.
  4. Add flavors: Stir in the soy sauce and miso paste, mixing until dissolved.
  5. Combine ingredients: Add the shredded chicken and green onions back into the broth. Mix gently.
  6. Serve warm: Ladle the ramen into bowls and top with half a soft-boiled egg.

Notes

Miso paste adds depth; it can be omitted or replaced with more soy sauce. Soft-boiled eggs are optional but recommended.
