A quick and comforting creamy pasta dish with tender chicken, bell peppers, and a rich Cajun sauce, perfect for busy weeknights.

Ingredients

  • 8 ounces pasta (fettuccine, penne, or your choice)
  • 1 pound chicken breast, sliced
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced
  • 1 cup onions, diced
  • Salt and pepper, to taste
  • Parmesan cheese, for serving
  • Chopped parsley, for garnish

Instructions

  1. Boil a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Heat the olive oil over medium heat in a large skillet. Add the sliced chicken along with the Cajun seasoning. Cook for about 5-7 minutes, stirring occasionally until the chicken is browned and cooked through.
  3. Add the diced onions and sliced bell peppers to the skillet. Sauté for another 3-4 minutes until the vegetables are softened, stirring frequently.
  4. Pour in the chicken broth and heavy cream. Stir to combine and bring to a gentle simmer. Allow it to cook for about 2-3 minutes until slightly thickened.
  5. Add the cooked pasta to the skillet and toss everything together, ensuring the pasta is fully coated in the creamy sauce.
  6. Taste the pasta and add salt and pepper as needed. Stir well to blend the flavors.
  7. Plate the pasta and top with grated Parmesan cheese and chopped parsley for a fresh finish.

Notes

For a thicker sauce, allow the cream sauce to simmer a little longer before adding the pasta.
