Rich and comforting, this Easy Crock Pot Lasagna Soup combines the classic flavors of traditional lasagna into a cozy, one-pot meal that’s perfect for busy weeknights.

Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 2–3 cloves garlic, minced
  • 1 bell pepper, diced (optional)
  • 28-ounce can diced tomatoes
  • 15-ounce can tomato sauce
  • 2 cups chicken or beef broth
  • 8 ounces lasagna noodles, broken into pieces
  • 15 ounces ricotta cheese
  • 1–2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Brown the meat in a skillet over medium heat until fully cooked. Drain excess fat and set aside.
  2. Prepare the base by combining the cooked meat, onion, garlic, bell pepper, diced tomatoes, tomato sauce, and broth in the slow cooker. Stir well.
  3. Add the seasoning: sprinkle in Italian seasoning, salt, and pepper. Mix to combine.
  4. Cook the soup on low for 6 hours or high for 3 hours.
  5. Add the broken noodles in the last 30 minutes of cooking. Stir to evenly distribute.
  6. Finish by stirring in ricotta cheese, topping with mozzarella and Parmesan; cover until melted.
  7. Serve in bowls and garnish with fresh herbs if desired. Enjoy!

Notes

For a vegetarian version, replace the meat with lentils or chickpeas. Use dairy-free cheese if needed.
