A delightful dish combining juicy, marinated chicken with smoky flavors, perfect for family gatherings or casual weeknight dinners.

Ingredients

  • 4 chicken legs or thighs (bone-in for juiciness)
  • ¾ cup soy sauce
  • 4 cloves garlic, minced
  • ¼ cup brown sugar
  • ½ teaspoon black pepper
  • 2 tablespoons vinegar
  • 2 tablespoons vegetable oil

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine the soy sauce, minced garlic, brown sugar, black pepper, vinegar, and vegetable oil. Stir well until the sugar dissolves completely.
  2. Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are completely coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight for maximum flavor.
  3. Preheat the Grill: About 15 minutes before grilling, preheat your grill to medium-high heat.
  4. Grill the Chicken: Remove the chicken from the marinade, letting any excess drip off. Place the chicken on the grill. Grill for about 6-8 minutes on each side or until the chicken is fully cooked and has grill marks, with an internal temperature of 165°F (74°C).
  5. Serve and Enjoy: Once done, transfer the grilled chicken to a serving platter and let it rest for a few minutes before serving. Enjoy the rich flavors of Filipino Chicken Barbecue hot off the grill.

Notes

For best flavor, marinate for at least 4 hours or overnight. Adjust grilling time for different chicken cuts. Allow chicken to rest after grilling.
