Classic Pot Roast

A hearty and comforting pot roast that transforms tough meat into tender morsels, perfect for family gatherings.

Ingredients

  • 3 to 4 pounds beef chuck roast
  • Salt and pepper
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 4 large carrots, cut into chunks
  • 4 medium potatoes, cut into chunks
  • 2 to 3 sprigs fresh thyme (or dried thyme)
  • 1 bay leaf

Instructions

  1. Season the beef chuck roast generously with salt and pepper on all sides.
  2. Sear the roast in a large pot or Dutch oven with olive oil over medium-high heat until browned (about 4-5 minutes per side).
  3. Remove the roast and set aside. In the same pot, add sliced onion and garlic. Sauté until translucent, about 3 minutes.
  4. Deglaze the pot with a splash of beef broth, scraping up any browned bits.
  5. Add the roast back to the pot, surrounding it with carrots and potatoes. Pour in the remaining beef broth and add thyme and bay leaf.
  6. Cover the pot and reduce heat to low. Simmer gently for 3 to 4 hours, until the meat is fork-tender.
  7. Serve the roast after letting it rest for 10 minutes, alongside the vegetables and spooning broth over everything.

Notes

Use cuts with fat marbling for tenderness. Let the meat rest after cooking for better juices distribution.
