Ingredients

  • 1 lb chicken breast, diced
  • 1 bell pepper, diced
  • 1 cup broccoli florets
  • 3 green onions, sliced
  • 2 tablespoons vegetable oil
  • 1/2 cup unsalted peanuts
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Make the Sauce: In a bowl, mix together soy sauce, rice vinegar, hoisin sauce, cornstarch, and a pinch of salt and pepper to create a smooth sauce.
  2. Heat the Oil: In a large skillet, heat the vegetable oil over medium heat until shimmering.
  3. Cook the Chicken: Add the diced chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
  4. Add Aromatics: Stir in the minced garlic and ginger, cooking for about 1 minute until fragrant.
  5. Incorporate Veggies: Add the diced bell pepper and broccoli florets to the skillet, cooking for an additional 3-4 minutes until the vegetables are tender yet still crisp.
  6. Combine Sauce and Chicken: Pour the prepared sauce over the chicken and vegetables, stirring well to coat everything evenly.
  7. Finish with Peanuts and Green Onions: Stir in the peanuts and sliced green onions, cooking for another 2 minutes until everything is heated through.
  8. Serve and Enjoy: Serve hot over cooked rice, garnishing with additional green onions if desired.
