A delightful and creamy soup filled with tender chicken, soft gnocchi, and fresh vegetables, perfect for any day of the week.

Ingredients

  • 3-4 boneless skinless chicken breasts, cooked and diced
  • 1 stalk of celery, chopped
  • ½ white onion, diced
  • 2 teaspoons minced garlic
  • ½ cup shredded carrots
  • 1 tablespoon olive oil
  • 4 cups low sodium chicken broth
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 16 ounces potato gnocchi
  • 2 cups half and half
  • 1 cup fresh spinach, roughly chopped

Instructions

  1. Sauté the olive oil over medium heat. Add the celery, onions, garlic, and carrots, sautéing for about 2-3 minutes, or until the onions become translucent and fragrant.
  2. Add the cooked diced chicken, chicken broth, salt, pepper, and thyme to the pot. Stir well to combine and bring the mixture to a gentle boil.
  3. Gently stir in the potato gnocchi. Allow the soup to boil for an additional 3-4 minutes, until the gnocchi are cooked through and tender.
  4. Reduce the heat to low and stir in the half and half and chopped spinach. Cook for another 1-2 minutes until the spinach is wilted and tender. Taste and adjust the seasoning.
  5. Ladle the soup into bowls and serve hot. Enjoy your comforting bowl of soup!

Notes

You can substitute half and half with heavy cream for a richer texture or use a dairy-free alternative if desired.
