A delightful blend of flavors with tender chicken, vibrant vegetables, and a tangy sauce, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 bell pepper, cut into strips
  • 1/2 cup onion, diced
  • 1 cup pineapple chunks (fresh or canned)
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp cornstarch (to thicken the sauce)
  • 2 tbsp vegetable oil (for cooking)
  • Salt and pepper to taste

Instructions

  1. Make the sauce: In a bowl, mix together soy sauce, ketchup, brown sugar, rice vinegar, and cornstarch. Stir until well combined and set aside.
  2. Heat the oil: In a skillet, heat the vegetable oil over medium heat until hot but not smoking.
  3. Cook the chicken: Add the chicken pieces to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is nicely browned and cooked through.
  4. Add the vegetables: Stir in the diced onion and bell pepper. Sauté for another 3-4 minutes until the vegetables are softened.
  5. Combine with pineapple: Add the pineapple chunks to the skillet along with the prepared sauce mixture. Stir everything together.
  6. Thicken the sauce: Allow the mixture to cook for an additional 5-7 minutes until the sauce thickens. If it’s too thick, add a splash of water to reach your desired consistency.
  7. Serve: Serve your sweet and sour chicken over cooked rice or quinoa for a complete meal. Enjoy!
