Delightful, kid-friendly finger foods perfect for children’s birthday parties that ensure smiles all around.

Ingredients

  • 1 cup bell peppers, finely chopped
  • 1 cup carrots, grated
  • 1 cup cooked chicken, shredded (or substitute with tofu for a vegetarian option)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup all-purpose flour
  • 2 large eggs
  • ½ teaspoon baking powder
  • Salt and pepper, to taste
  • 1 tablespoon dried oregano or Italian seasoning
  • Optional: dipping sauce (like ranch or hummus)

Instructions

  1. Prepare ingredients: Gather and prepare all your ingredients. Chop the bell peppers, grate the carrots, and shred the chicken or tofu.
  2. Mix batter: In a large bowl, combine the flour, baking powder, salt, and pepper. Whisk these dry ingredients together.
  3. Combine ingredients: Add the eggs to the dry mixture and stir well. Once combined, fold in the chopped bell peppers, grated carrots, and shredded chicken or tofu. Add in the cheese and herbs, mixing until just combined.
  4. Preheat the oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  5. Scoop and shape: Drop rounded tablespoons of the mixture onto the prepared baking sheet, leaving space between each scoop.
  6. Bake: Bake for about 10-12 minutes, or until the edges are golden and the tops are set.
  7. Cool and serve: Allow to cool for a few minutes before serving warm with your chosen dipping sauce.

Notes

Chop vegetables evenly for even cooking. Use fresh ingredients for the best flavor. Monitor cooking time to prevent dryness.
