A classic French dish combining tender chicken with a rich red wine sauce, perfect for special occasions and cozy family dinners.

Ingredients

  • 1 whole chicken, cut into pieces
  • 4 cups red wine (preferably a Pinot Noir or Burgundy)
  • 1 onion, chopped
  • 2 carrots, sliced
  • 4 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 4 ounces bacon, diced
  • 2 tablespoons olive oil
  • 2 tablespoons flour
  • 2 cups chicken broth
  • 1 bouquet garni (thyme, bay leaf, parsley)
  • Salt and pepper to taste

Instructions

  1. Cook the bacon: In a large Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
  2. Brown the chicken: In the same pot, add olive oil. Brown the chicken pieces on all sides, then remove and set aside.
  3. Sauté the vegetables: Add the chopped onions, sliced carrots, and minced garlic to the pot. Sauté until the vegetables are softened, about 5–7 minutes.
  4. Add the flour: Sprinkle flour over the sautéed vegetables and stir for 1 minute to cook off the raw flavor of the flour.
  5. Deglaze with wine: Pour in the red wine, scraping up any brown bits from the bottom of the pot. Bring to a simmer.
  6. Combine ingredients: Add the chicken broth, bouquet garni, and the browned chicken pieces back into the pot.
  7. Cook slowly: Bring the entire mixture to a simmer, cover, and cook for about 90–120 minutes, until the chicken is tender.
  8. Add mushrooms and bacon: During the last 30 minutes of cooking, add the sliced mushrooms and cooked bacon to the pot.
  9. Season and serve: Season with salt and pepper to taste. Serve hot with your chosen sides.

Notes

Choose quality wine for better flavor. Let the Coq au Vin sit for a few hours or overnight for deeper flavors.
