French Onion Chicken & Rice

A comforting one-pan meal with chicken baked atop fluffy rice and smothered in rich onion soup, perfect for easy weeknight dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup French onion soup
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup shredded cheese (Gruyere or Swiss)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil over medium heat in a large oven-safe skillet.
  3. Season the chicken breasts with salt and pepper, then brown them on both sides for about 3-4 minutes per side.
  4. Remove the browned chicken from the skillet and set aside on a plate.
  5. Add the rice to the same skillet and toast it lightly for about 1 minute.
  6. Pour in the French onion soup and chicken broth, stirring to combine.
  7. Return the browned chicken to the skillet, placing it on top of the rice mixture.
  8. Cover the skillet and bake in the preheated oven for 25-30 minutes.
  9. Sprinkle shredded cheese on top of the chicken and bake uncovered for an additional 5-10 minutes.
  10. Garnish with chopped parsley before serving.

Notes

Substitute with chicken thighs for richer flavor; use brown rice with adjusted cooking time; experiment with cheese varieties to fit preferences.
