A hearty and flavorful casserole with ground beef, cabbage, and crunchy Fritos, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 small head of cabbage, chopped
  • 1 can (15 oz) diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups Fritos corn chips
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown the beef in a large skillet over medium heat for 5-7 minutes, breaking it apart as it cooks. Drain excess grease if necessary.
  2. Sauté the chopped onions until softened, about 3-4 minutes, then stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add chopped cabbage, diced tomatoes, chili powder, cumin, salt, and pepper; cook for 8-10 minutes until the cabbage is tender.
  4. Layer the mixture in a greased 9×13-inch baking dish, topping with Fritos and shredded cheese.
  5. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until the cheese is melted and bubbly.
  6. Cool for a few minutes before serving.
