Greek Chicken Casserole

A delicious and wholesome one-pan dish combining tender chicken, nutty brown rice, and vibrant vegetables, topped with creamy feta cheese.

Ingredients

  • 1 lb chicken breasts, diced
  • 1 cup brown rice
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup feta cheese, crumbled
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C) to prepare for baking.
  2. In a large oven-safe pan, heat the olive oil over medium heat. Add the minced garlic and sauté until it releases a fragrant aroma, about 1 minute.
  3. Add the diced chicken to the pan and cook until it’s no longer pink, around 5-7 minutes. Stir occasionally to ensure even cooking.
  4. Stir in the brown rice, chickpeas, spinach, cherry tomatoes, oregano, salt, and pepper, mixing everything together for a colorful blend.
  5. Add the chicken broth to the mixture. Increase heat to high and bring it to a boil.
  6. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15 minutes.
  7. After 15 minutes, remove the lid and sprinkle the crumbled feta cheese evenly over the top. Transfer the pan to the oven and bake for 20-25 minutes, or until the cheese is golden and bubbly.
  8. Allow the casserole to cool for a few minutes before serving. Garnish with freshly chopped parsley or additional feta if desired.
