Make the Pasta Dough: In a clean bowl, mound the flour and create a well in the center. Add eggs, salt, and olive oil. Gradually combine until a dough forms. Knead until smooth, about 5-7 minutes. Wrap in plastic and let rest for 30 minutes.
Prepare the Filling: In a mixing bowl, combine ricotta, pumpkin puree, Parmesan, salt, pepper, and nutmeg (if using). Mix until smooth, then set aside.
Roll Out the Dough: After resting, divide the dough into four pieces. Roll out each piece thinly, about 1/16-inch thick.
Cut and Shape the Regalini: Cut the rolled pasta into squares, about 3 inches wide. Place a small spoonful of filling in the center of each square. Fold the square into a triangle and press edges to seal.
Cook the Regalini: Boil a large pot of salted water. Add the regalini and cook for 3-4 minutes until they float to the surface.
