A deliciously warming Pumpkin Soup that highlights the rich flavors of pumpkin and spices, perfect for cozy family dinners.

Ingredients

  • 1 medium-sized pumpkin (about 2-3 pounds), peeled and chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream (or coconut milk for dairy-free option)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped parsley or chives for garnish (optional)

Instructions

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
  2. Add the chopped pumpkin pieces to the pot and mix well with the onion and garlic.
  3. Incorporate broth and spices: Pour in the vegetable or chicken broth. Add cumin, cinnamon, nutmeg, salt, and pepper. Stir to combine, then bring to a boil.
  4. Simmer: Reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the pumpkin is tender.
  5. Blend until smooth: Using an immersion blender, puree the soup in the pot until smooth. Alternatively, transfer in batches to a blender, blending until creamy.
  6. Stir in cream: Return the soup to the pot (if using a blender) and stir in the heavy cream. Heat on low until warmed through, adjusting seasoning as necessary.
