Baked stuffed peppers are a delicious and hearty dish that packs vibrant flavors and considerable nutritional value.

Ingredients

  • 4 large bell peppers (any color)
  • 1 cup cooked quinoa or rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting off the tops and removing the seeds and membranes. Place in a baking dish.
  3. Make the filling by combining quinoa or rice, black beans, corn, chili powder, cumin, salt, and pepper in a large bowl.
  4. Stuff each bell pepper with the filling, packing it slightly. Top with shredded cheese.
  5. Bake covered with aluminum foil for 25 minutes. Remove the foil and bake for an additional 5-10 minutes until cheese is bubbly and golden.
  6. Garnish with fresh herbs if desired and serve warm.

Notes

These stuffed peppers store well and can be made ahead of time. Adjust the spices to taste.
