Deliciously spiced pumpkin bars topped with creamy frosting for a perfect fall treat.

Ingredients

  • 1 can (15 ounces) pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. Mix the pumpkin puree, granulated sugar, vegetable oil, eggs, and vanilla extract in a large mixing bowl. Whisk until smooth.
  3. Combine the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a separate bowl.
  4. Gradually add the dry ingredients into the wet mixture. Stir until just combined; be careful not to overmix.
  5. Pour the batter evenly into the prepared baking pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for 25 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool the bars in the pan on a wire rack for about 10 minutes, then transfer to the rack to cool completely.
  8. Beat the softened cream cheese and unsalted butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fluffy.
  9. Frost the cooled pumpkin bars evenly with the cream cheese frosting.
