Pasta Primavera is a delightful dish that brings the freshness of vegetables and the comfort of pasta together in one beautiful meal.

Ingredients

  • 12 ounces pasta (spaghetti, fettuccine, or penne)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 cup vegetable broth
  • ½ cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Sauté aromatics: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute, or until fragrant.
  3. Add vegetables: Add the zucchini, bell pepper, cherry tomatoes, broccoli, and carrot to the skillet. Sauté for 5-7 minutes until the vegetables are tender but still crisp.
  4. Combine pasta and broth: Pour in the vegetable broth and stir well. Add the drained pasta and toss everything together. Adjust consistency with reserved pasta water if needed.
  5. Season: Season with salt and pepper to taste. Toss in fresh herbs if using.
  6. Serve: Plate the Pasta Primavera, sprinkle with grated Parmesan cheese, and enjoy!

Notes

To enhance flavors, avoid overcooking vegetables and use fresh herbs. The dish can also be made gluten-free using gluten-free pasta.
