A cozy and comforting soup that brings the delicious flavors of chicken pot pie in a quick and easy meal.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups biscuits or pie crust, for topping (optional)

Instructions

  1. Sauté the vegetables: In a large pot or Instant Pot, melt the butter over medium heat. Add the diced onions, carrots, and celery. Sauté until they are tender, about 5-7 minutes.
  2. Add chicken and broth: Stir in the chicken breasts, chicken broth, dried thyme, garlic powder, salt, and pepper. If using an Instant Pot, close the lid and set to high pressure for 15 minutes; for the stovetop, bring to a boil, then reduce the heat and simmer for 30 minutes.
  3. Shred the chicken: Once cooked, remove the chicken from the pot. Shred it using two forks and return it to the pot.
  4. Incorporate peas and cream: Stir in the frozen peas and heavy cream, allowing the soup to heat through and the flavors to meld, about 5 minutes.
  5. Top and serve: If desired, top the soup with biscuits or pie crust before serving, either baked separately or placed on top and baked until golden brown.
