A comforting and nutritious one-pot meal featuring tender chicken, brown rice, and vibrant broccoli, perfect for busy weeknights.

Ingredients

  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup brown rice, rinsed
  • 2 cups fresh broccoli florets
  • 2 cups low-sodium chicken broth
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: garlic powder or onion powder

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chicken pieces, seasoning with salt and pepper, and cook until browned, about 5-7 minutes.
  2. Add the rinsed brown rice to the pot and stir to combine.
  3. Pour in the chicken broth and bring to a boil, scraping the bottom of the pot to incorporate any brown bits.
  4. Lower the heat to a simmer, cover the pot, and let it cook for about 20 minutes.
  5. Stir in the broccoli florets in the last 5 minutes of cooking.
  6. Remove the pot from heat, sprinkle cheese on top, and cover for a few minutes to melt before serving.

Notes

Ensure the rice is fully cooked and adjust liquid as necessary. Cut chicken evenly for even cooking.
