Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can white beans, rinsed and drained
  • 1 cup chicken broth
  • 1 can diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: Sour cream, cilantro, avocado, or cheese

Instructions

  1. Prepare the chicken: Place the chicken breasts in the bottom of the slow cooker.
  2. Add the white beans, chicken broth, diced tomatoes, onion, garlic, cumin, chili powder, salt, and pepper.
  3. Mix everything well to ensure the chicken is coated and the ingredients are evenly distributed.
  4. Set the cooker: Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender.
  5. Shred the chicken: About 30 minutes before serving, remove the chicken and shred it using two forks. Return the shredded chicken to the pot and stir to combine.
