High Protein Lasagna Soup

A delightful twist on classic lasagna flavors in a warm, hearty soup form, rich in protein and easy to make.

Ingredients

  • 1 lb ground turkey or chicken
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 8 oz whole wheat lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Brown the meat in a large pot over medium heat with the diced onion and minced garlic until the meat is no longer pink and onions are translucent, about 5-7 minutes.
  2. Add the crushed tomatoes, chicken (or vegetable) broth, water, oregano, basil, salt, and pepper. Bring to a boil.
  3. Cook the broken lasagna noodles by stirring them in and letting the soup simmer for about 20 minutes until cooked through.
  4. Incorporate the ricotta cheese until well blended into the soup for a creamy texture.
  5. Serve by ladling into bowls and topping with shredded mozzarella cheese and fresh basil.

Notes

For a thicker soup, reduce the broth or water; store leftovers in the fridge for up to 3 days or freeze for 3 months.
