Ingredients

  • 2 chicken breasts, diced
  • 1 cup rice
  • 4 cups chicken broth
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. Sauté the chicken: In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Stir occasionally to ensure even cooking.
  2. Add the vegetables: Once the chicken is browned, add the onions, garlic, carrots, and celery to the pot. Sauté until the vegetables are tender, which should take about 5 minutes.
  3. Incorporate rice and broth: Stir in the rice, mixing well with the chicken and vegetables. Pour in the chicken broth and give everything a good stir.
  4. Simmer the soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes or until the rice is cooked through and tender. If needed, add more broth or water to reach your desired consistency.
  5. Season to taste: Once the rice is cooked, season the soup with salt and pepper to taste. Feel free to adjust based on your preference.
