A delightful, comforting chicken noodle soup made effortlessly in a crockpot, perfect for any time of year.

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 3 medium carrots, sliced
  • 3 celery stalks, sliced
  • 1 onion, diced
  • 2-3 cloves garlic, minced
  • 8 cups chicken broth (preferably low-sodium)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups egg noodles
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the ingredients: Chop the carrots, celery, onion, and garlic. Set aside in a bowl.
  2. Add the chicken: Place the chicken breasts or thighs at the bottom of the crockpot.
  3. Layer in the vegetables: Add the chopped carrots, celery, onion, and minced garlic on top of the chicken.
  4. Pour in the broth: Pour the chicken broth over the vegetables.
  5. Season to taste: Sprinkle dried thyme, parsley, and a bit of salt and pepper over the mixture.
  6. Cook: Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is fully cooked and tender.
  7. Shred the chicken: Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
  8. Add the noodles: Stir in the egg noodles and cook for another 20-30 minutes on high until the noodles are tender.
  9. Serve: Taste and adjust seasoning as needed. Garnish with fresh parsley before serving.

Notes

Avoid overcooking the chicken to prevent it from drying out. Add noodles towards the end for best texture.
