A comforting classic chicken noodle soup filled with tender chicken, vegetables, and rich flavors—perfect for cozy nights.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 8 ounces egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, sautéing until the vegetables are tender, about 5 minutes.
  2. Add garlic: Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Pour in broth: Add the chicken broth to the pot. Increase the heat, bringing the mixture to a boil.
  4. Incorporate chicken and noodles: Stir in the shredded chicken, thyme, bay leaf, and egg noodles.
  5. Cook noodles: Allow the soup to simmer until the noodles are tender, approximately 7-8 minutes.
  6. Finish and serve: Remove the bay leaf, season the soup with salt and pepper to taste, and garnish with fresh parsley before serving.

Notes

Don’t overcook noodles; keep an eye on them to ensure they are tender but not mushy.
