Homemade Cream of Chicken Soup

A comforting cream of chicken soup made from scratch, perfect for casseroles or enjoyed on its own.

Ingredients

  • 1 cup cooked chicken, shredded
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a saucepan over medium heat until fully liquid.
  2. Add the flour to the melted butter, stirring continuously for about 1-2 minutes until bubbly but not browned.
  3. Gradually whisk in the chicken broth, combining it with the roux. Slowly add the milk, whisking to prevent lumps.
  4. Keep stirring until the mixture thickens, about 5-7 minutes.
  5. Stir in the garlic powder, onion powder, and season with salt and pepper to taste.
  6. Fold in the shredded chicken and mix well.
  7. Serve hot or cool before storing in the fridge or freezer.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend. Consider adding fresh herbs for extra flavor.
