A delightful summer dessert showcasing fresh peaches in a creamy custard filling, all nestled in a flaky pie crust. Perfect for gatherings or cozy evenings at home.

Ingredients

  • 1 pie crust: Use store-bought or homemade; both work well.
  • 4 cups fresh peaches, sliced: Choose ripe, juicy peaches for the best flavor.
  • 3/4 cup sugar: This sweetens the peaches and balances the custard.
  • 4 large eggs: These provide structure and creaminess to the filling.
  • 1 cup heavy cream: Gives the custard a rich and silky texture.
  • 1 teaspoon vanilla extract: Adds a lovely depth of flavor.
  • 1/4 teaspoon salt: Enhances the overall taste.
  • 1 tablespoon cornstarch: Helps thicken the custard and provides stability.

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pre-bake the pie crust for 10 minutes to prevent a soggy bottom.
  3. Prepare the peaches by mixing them with 1/4 cup of sugar for 10 minutes.
  4. Mix the custard by whisking together the eggs, heavy cream, vanilla extract, salt, and cornstarch until smooth.
  5. Assemble the pie by arranging peach slices in the crust and pouring the custard mixture over them.
  6. Bake for 40 to 50 minutes until the custard is set and lightly golden.
  7. Cool the pie before serving to help the filling firm up.

Notes

Choose the ripest peaches for best flavor. Chill for a couple of hours before serving for enhanced taste.
