A delightful one-pan meal featuring tender chicken thighs marinated in a sweet and tangy honey balsamic glaze, creamy goat cheese mashed potatoes, and perfectly roasted carrots.

Ingredients

  • 4 chicken thighs
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 pounds potatoes
  • 1/2 cup goat cheese
  • 1/4 cup milk
  • 1 tablespoon butter
  • 1 pound carrots
  • Olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together honey, balsamic vinegar, olive oil, salt, and pepper in a bowl to create the marinade.
  3. Coat the chicken thighs with the marinade and place in a baking dish.
  4. Roast the marinated chicken for 25-30 minutes until the internal temperature reaches 165°F (74°C).
  5. Peel and chop the potatoes, then boil in salted water until tender (about 15-20 minutes).
  6. Drain the potatoes and mash with goat cheese, milk, and butter until creamy. Season with salt and pepper.
  7. Toss the carrots with olive oil, salt, and pepper, and add them to the baking dish with the chicken during the last 20 minutes of roasting.
  8. Serve the chicken thighs alongside the mashed potatoes and carrots, garnished with fresh herbs if desired.

Notes

Use a meat thermometer to check for doneness. For smoother mashed potatoes, mash while hot and gradually add milk until desired consistency is reached.
