A quick and creamy Instant Pot version of the classic Chicken Alfredo, perfect for busy weeknights.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz fettuccine pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Parsley for garnish (optional)

Instructions

  1. Sauté the garlic in olive oil in the Instant Pot for about 1 minute until fragrant.
  2. Brown the chicken breasts for 2-3 minutes on each side until golden.
  3. Deglaze the pot with chicken broth, scraping up any browned bits.
  4. Add the fettuccine pasta and place the browned chicken on top.
  5. Set the Instant Pot to ‘Manual’ mode for 8 minutes with the lid closed.
  6. Release the pressure carefully once cooking is complete.
  7. Shred the chicken with two forks and return it to the pot.
  8. Make the Alfredo sauce by stirring in cream and Parmesan until well combined.
  9. Serve hot, garnished with parsley if desired.

Notes

For variations, substitute chicken with shrimp or vegetables. Adjust sauce consistency with more broth if too thick.
