A delicious and aromatic Vietnamese soup made with tender chicken and a fragrant broth, perfect for comfort food lovers.

Ingredients

  • 8 cups chicken broth (preferably low sodium)
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, sliced
  • 3 star anise
  • 1 cinnamon stick
  • 3-4 whole cloves
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon fish sauce (or soy sauce)
  • Fresh cilantro
  • Fresh basil (especially Thai basil)
  • Lime wedges
  • Sliced green onions
  • Bean sprouts
  • Jalapeños or chili slices (optional)

Instructions

  1. Prepare the broth by combining chicken broth, sliced onion, garlic, ginger, star anise, cinnamon stick, and cloves in a large pot. Bring to a gentle boil over medium heat.
  2. Add the chicken breasts to the boiling broth. Reduce heat and simmer uncovered for about 20-25 minutes, or until chicken is cooked through.
  3. Remove the chicken and strain the broth to remove spices and solids, returning the clear broth to the pot.
  4. Shred the chicken into bite-sized pieces using two forks.
  5. Season the broth by returning the shredded chicken to the pot and stirring in fish sauce. Adjust seasoning as necessary.
  6. Serve the soup in bowls and top with cilantro, basil, green onions, bean sprouts, lime wedges, and chili slices if desired.
