A crispy and tangy dish featuring tender chicken breasts coated in Parmesan breadcrumbs and drizzled with a zesty lemon sauce.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Zest of 1 lemon
  • 1/4 cup lemon juice (freshly squeezed)
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • Cooked pasta or rice
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) or heat olive oil in a skillet over medium heat if frying.
  2. Combine the breadcrumbs, Parmesan cheese, garlic, salt, pepper, and lemon zest in a mixing bowl.
  3. Coat each chicken breast in lemon juice and dredge in the breadcrumb mixture, pressing lightly.
  4. Place the chicken on a greased baking pan, drizzle with olive oil, and bake for 25-30 minutes until cooked through.
  5. In a saucepan, melt the butter, add extra lemon juice to taste, and stir.
  6. Serve the chicken hot with the lemon sauce poured over it and garnish with parsley.
