Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried mixed herbs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels. This helps the skin become crispy while roasting.
  3. In a small bowl, mix the garlic powder, paprika, dried mixed herbs, salt, black pepper, and olive oil.
  4. Rub the seasoning mixture evenly over each chicken thigh, making sure the skin and sides are well coated.
  5. Arrange the chicken thighs skin-side up on a baking sheet, leaving a little space between each piece.
  6. Roast for 30–35 minutes, or until the skin is golden and crispy and the internal temperature reaches 165°F (74°C).
  7. Remove the chicken from the oven and let it rest for 5 minutes before serving.
  8. Serve hot with your favorite vegetables, rice, potatoes, or a fresh salad.

Notes

  • Pat the chicken thighs dry before seasoning for crispier skin.

  • Leave space between the chicken pieces so they roast instead of steam.

  • Use a meat thermometer to check that the thickest part reaches 165°F (74°C).

  • For extra crispy skin, place the chicken under the broiler for 1–2 minutes at the end, watching closely.

  • Let the chicken rest for about 5 minutes before serving to help keep the meat juicy.

  • Boneless, skinless chicken thighs can be used, but they will cook faster, so check them earlier.
