Ingredients

  • 1 cup chickpeas, cooked or canned
  • 1/2 cup orzo pasta
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups vegetable broth
  • 1/4 cup fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Olive oil (for sautéing)

Instructions

  1. Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté until vegetables are tender, about 5 minutes.
  2. Add Garlic and Oregano: Stir in minced garlic and oregano, cooking for another minute until fragrant.
  3. Bring to a Boil: Add vegetable broth and bring to a boil, stirring occasionally.
  4. Cook the Orzo: Once boiling, add the orzo and cook according to package instructions until al dente, typically 8-10 minutes.
  5. Add Chickpeas and Lemon: Stir in the cooked chickpeas and lemon juice, cooking for an additional 2–3 minutes until heated through.
  6. Season and Serve: Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.

Notes

Avoid boiling after adding lemon juice to maintain its bright flavor.
