A delightful Indian dish featuring tender chicken simmered in a rich, creamy sauce with yogurt and heavy cream, infused with flavorful spices.

Ingredients

  • 500g chicken, cut into pieces
  • 1 cup heavy cream
  • 1 cup yogurt
  • 2 medium onions, finely chopped
  • 2 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil or ghee
  • Fresh coriander leaves for garnish

Instructions

  1. Heat the oil or ghee in a pan over medium heat. Let it warm up until shimmering.
  2. Add the cumin seeds and let them splutter for a few seconds to release their aroma.
  3. Cook the chopped onions and sauté until they are golden brown, about 5 to 7 minutes. Stir occasionally for even cooking.
  4. Incorporate the ginger-garlic paste and green chilies, cooking for an additional minute until fragrant.
  5. Add the chicken pieces to the pan, sautéing until they are no longer pink, about 5 minutes.
  6. Mix in the yogurt, and let it cook for 5 minutes, allowing the flavors to meld.
  7. Add the heavy cream and salt, stirring to combine. Simmer for 10-15 minutes until the chicken is cooked through and the gravy thickens.
  8. Finish by sprinkling garam masala and garnish with fresh coriander leaves before serving hot with rice or naan.

Notes

Stir the onions well for even cooking, and ensure the yogurt is at room temp to prevent curdling.
