A delightful recipe combining tender chicken breasts with a rich, creamy sauce, sun-dried tomatoes, and fresh spinach, perfect for a quick yet impressive weeknight dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt, pepper, and Italian herbs (to taste)

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the chicken breasts and sauté for about 5-7 minutes on each side until they are golden brown. Remove the chicken and set aside.
  3. Sauté the minced garlic and chopped sun-dried tomatoes in the same pot for about 2 minutes, stirring frequently until fragrant.
  4. Pour in the chicken broth, stirring to combine, and bring to a simmer.
  5. Add the chicken back into the pot and allow it to simmer for about 5-10 minutes, ensuring it cooks through.
  6. Stir in the heavy cream and Parmesan cheese until melted and well-blended.
  7. Fold in the fresh spinach and cook for an additional 2-3 minutes, or until the spinach is wilted.
  8. Season with salt, pepper, and Italian herbs according to your preference. Serve hot for the best flavor.

Notes

For lighter options, substitute heavy cream with half-and-half or coconut milk. This dish can be frozen for up to a month; however, the cream may change texture when thawed.
