Mediterranean Chicken and Rice

A delightful twist on classic chicken and rice, infused with vibrant Mediterranean flavors and healthy ingredients.

Ingredients

  • 2 chicken breasts, sliced (gives you 4 pieces)
  • 2 tsp lemon juice
  • 2 tsp olive oil
  • 1/2 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp ground black pepper
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp turmeric powder
  • 1 cup rice, rinsed and soaked in water for 30 minutes
  • 2 and 1/4 cups chicken broth (low sodium preferred)
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 1 onion, finely chopped
  • 1 tsp garlic, finely chopped
  • 1/2 cup frozen peas

Instructions

  1. Mix the chicken slices with lemon juice, olive oil, and the seasoning blend. Set aside to marinate.
  2. Heat 2 tsp of olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent, about 3-4 minutes. Then, add chopped garlic and sauté for an additional minute until fragrant.
  3. Add the marinated chicken pieces to the pot. Cook for about 5-7 minutes until browned and cooked through.
  4. Stir in the rinsed rice, ensuring it’s well combined with the chicken and aromatics. Pour in the chicken broth, add the bay leaf and cinnamon stick, and stir gently.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and allow to simmer for 15-20 minutes, or until the rice has absorbed the broth and is tender.
  6. Add the frozen peas in the last 5 minutes of cooking, stirring gently to mix them into the rice.
  7. Remove from heat once cooked and let sit covered for 5 minutes. Fluff the rice with a fork before serving.

Notes

Soaking the rice helps eliminate excess starch, and marinating the chicken enhances its flavor. Adjust liquid for high elevations.
