A delightful twist on classic chocolate cake, infused with ripe blackberries for a unique flavor.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup hot water
  • 1 cup fresh blackberries
  • 2 cups butter, softened
  • 4 cups powdered sugar
  • 1/2 cup cocoa powder
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a large bowl, whisk the flour, sugar, cocoa powder, baking soda, and salt.
  3. Combine wet ingredients: In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract.
  4. Incorporate the wet mixture into the dry ingredients, stirring until just combined.
  5. Add hot water and blackberries, stirring gently.
  6. Prepare for baking by pouring the batter evenly into the prepared pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack.
  9. Make the frosting by beating the softened butter, then gradually add powdered sugar, cocoa powder, and heavy cream until fluffy.
  10. Assemble the cake by frosting one layer, adding the second layer, and frosting the top and sides.
  11. Garnish with fresh blackberries just before serving.

Notes

Use room temperature eggs for a lighter cake texture. Test for doneness a few minutes before the timer goes off.
