A heartwarming beef chuck stew featuring tender meat, hearty vegetables, and savory broth, perfect for a cozy dinner.

Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. Brown the beef: In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
  2. Sauté the aromatics: In the same pot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes, until the onion is softened and translucent.
  3. Add tomato paste and seasoning: Stir in the tomato paste, thyme, salt, and pepper. Cook for another minute to combine the flavors.
  4. Combine ingredients: Return the browned beef to the pot. Add the sliced carrots, diced potatoes, bay leaves, and beef broth.
  5. Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 90 to 120 minutes, until the beef is tender.
  6. Finish and serve: After cooking, remove the bay leaves before serving the stew warm. Enjoy it with crusty bread or over rice for a complete meal.

Notes

Cut uniform pieces of beef and vegetables for even cooking. Don’t skip the browning step for added flavor.
