A creamy and comforting classic, this homemade macaroni and cheese is perfect for any occasion and customizable to suit your taste.

Ingredients

  • 2 cups macaroni pasta (elbow or any pasta shape)
  • 4 tablespoons butter
  • ¼ cup all-purpose flour
  • 2 cups milk (whole)
  • 2 cups shredded cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon mustard powder (optional)
  • ½ cup breadcrumbs (optional)

Instructions

  1. Cook the pasta by bringing a large pot of salted water to a boil. Add the macaroni and cook according to the package instructions until al dente. Drain and set aside.
  2. Make the roux by melting the butter in a large saucepan over medium heat. Whisk in the flour and cook for about 1 minute, stirring constantly.
  3. Add the milk gradually, whisking to ensure no lumps. Continue cooking until the mixture thickens, about 3-5 minutes.
  4. Remove the saucepan from heat and stir in the shredded cheddar cheese, salt, pepper, and mustard powder (if using) until melted and creamy.
  5. Combine the cooked macaroni with the cheese sauce, ensuring each piece is well-coated.
  6. Transfer to a baking dish for a crispy topping, if desired, and sprinkle breadcrumbs over the top.
  7. Preheat the oven to 350°F (175°C) and bake for about 15-20 minutes, until golden and crispy.

Notes

For a creamier texture, add extra milk when mixing pasta and sauce. Use freshly shredded cheese for the best melt.
