A comforting and hearty creamy soup filled with tender gnocchi and chicken, perfect for cozy family dinners.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 8 cups chicken broth
  • 1 pound cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 cup heavy cream
  • 1 pound gnocchi
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Sauté the olive oil over medium heat. Add the chopped onions and minced garlic. Sauté until the onions become translucent, about 3-4 minutes.
  2. Add the diced carrots and celery. Cook for an additional 5 minutes, allowing the vegetables to soften slightly.
  3. Pour in the chicken broth and increase the heat to bring the mixture to a boil.
  4. Once boiling, add the shredded chicken, dried thyme, and dried basil. Reduce the heat and let it simmer for about 10 minutes to meld the flavors.
  5. Stir in the heavy cream and gnocchi, allowing it to cook until the gnocchi becomes tender, approximately 3-5 minutes.
  6. Add the fresh spinach and season with salt and pepper to taste. Stir until the spinach wilts. Serve hot.

Notes

You can substitute cooked chicken with rotisserie chicken for more flavor and convenience. For a lower-calorie version, use half-and-half instead of heavy cream.
