Ingredients

  • 1 lb chicken breast, diced
  • 1 cup rice (long grain or basmati)
  • 2 cups chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Green onions and parsley, chopped (for garnish)

Instructions

  1. Sauté the chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and season it with Cajun seasoning, salt, and pepper. Cook until browned and fully cooked through, about 5-7 minutes.
  2. Set the chicken aside: Remove the chicken from the skillet and place it on a plate.
  3. Cook the vegetables: In the same skillet, add the chopped onion, minced garlic, and bell pepper. Sauté for about 3-4 minutes, or until the vegetables are tender and fragrant.
  4. Incorporate the rice: Stir in the rice and allow it to cook for an additional minute, letting it absorb some of the flavors.
  5. Add broth and boil: Pour in the chicken broth and bring the mixture to a boil.
  6. Simmer the mixture: Reduce the heat to low. Add the cooked chicken back into the skillet, cover it, and let it simmer for about 20 minutes, or until the rice is cooked through and the liquid is absorbed.
  7. Fluff and garnish: Remove the skillet from heat. Fluff the rice with a fork and garnish with green onions or parsley if desired. Serve warm.
