A comforting dish combining tender chicken, hearty rice, and vibrant peas, all cooked in one pot for easy preparation and cleanup.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breasts, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain rice
  • 4 cups chicken broth
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned, about 5-7 minutes.
  3. Stir in the chopped onion and minced garlic, cooking until softened, about 3-4 minutes.
  4. Add the rice and stir for 1-2 minutes to toast it lightly.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is cooked.
  7. Stir in the frozen peas and season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.
