A comforting and easy one-pot dish that combines tender chicken, marinara sauce, and al dente pasta, perfect for busy weeknights or family gatherings.

Ingredients

  • 8 ounces penne pasta
  • 2 cups chicken broth
  • 1 cup marinara sauce
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Prepare the chicken: Season the chicken pieces with Italian seasoning, salt, and pepper.
  2. Brown the chicken: In a large pot or deep skillet, heat olive oil and add the chicken, cooking for 5–7 minutes until browned. Remove and set aside.
  3. Sauté aromatics: In the same pot, add more olive oil if needed and sauté garlic or onion for 1–2 minutes.
  4. Add pasta and broth: Stir in penne pasta, chicken broth, and marinara sauce; bring to a gentle boil, then reduce heat.
  5. Cook the pasta: Cover and simmer for 10–12 minutes or until al dente, stirring occasionally.
  6. Combine chicken and cheese: Stir in the browned chicken, top with mozzarella and Parmesan, cover, and let cook for another 3–5 minutes until cheese is melted.
