Ingredients
1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
4 cups vegetable broth
2 cups mixed vegetables (e.g., carrots, celery, bell peppers, peas)
1 cup heavy cream or coconut milk (for a dairy-free option)
Salt and pepper to taste
Fresh herbs (e.g., parsley or thyme) for garnish
Instructions
Sauté the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-5 minutes.
Add the vegetable broth and bring the mixture to a boil.
Incorporate the mixed vegetables to the pot. Cook until they’re tender, about 10 minutes.
Reduce the heat to low and stir in the heavy cream or coconut milk. Mix well to combine and warm for an additional 2-3 minutes.
Taste and adjust seasoning with salt and pepper as desired.
Serve by ladling the soup into bowls and garnishing with fresh herbs before serving hot.
Notes
Use fresh vegetables for the best flavor. Frozen vegetables can work as an alternative.
